Vanilla Layer Cake

Ingredients

2 ½ cups of Gluten Free All Purpose Flour
4 tsp of baking powder
½ tsp of salt
¾ cup of unsalted butter at room temperature
1 ½ cups of sugar
3 tbsp of vegetable oil
1 ½ tbsp of vanilla extract
4 large eggs
1 ¼ cups of milk

To make the cake

  • Grease and flour 3 eight inch pans

  • Preheat oven to 350 degrees

  • Sift the flour, baking powder and salt in a medium sized bowl, twice

  • Beat the beat, sugar, oil and vanilla extract until light and fluffy, at least 3-4 minutes

  • Add the eggs, one at a time, mixing each one until combined, scrape down the sides of the bowl as needed to make sure all ingredients are well incorporated

  • Add half of the flour mixture and mix until it is mostly combined

  • Slowly add the milk and mix until it is fully incorporated into the mix

  • The batter may look a bit curdled but no worries it will work out in the end

  • Add the remaining of the flour mixture and mix until all the ingredients are combined, do not overmix the batter

  • Divide between the 3 prepared pans

  • Bake for 22-25 minutes or until a tooth pick inserted comes out clean.

  • Remove the cakes from the oven, let cool for a few minutes then invert them on a baking rack until they are fully cooled.

Vanilla Buttercream

Ingredients

1 cup of unsalted butter at room temperature
4 cups of sifted icing sugar
1 tbsp of vanilla extract
up to 4 tbsp of heavy whipping cream

To make the icing

  • In a mixing bowl beat the butter for approximately 5 minutes

  • Slowly add the icing sugar and continue beating, scrape down the sides of the bowl

  • Mix in vanilla extract

  • Then add your heavy whipping cream. If you want a thicker consistency add less cream and for a thinner icing add all of the heavy cream
